Fluffy Sugar-Free Pancakes with Stevia!

  1. 1 cup whole wheat flour
  2. 1 tsp baking powder
  3. ½ tsp baking soda
  4. ¼ tsp salt
  5. 1 cup unsweetened almond milk
  6. 1 tbsp apple cider vinegar
  7. 1 tsp vanilla extract
  8. 1 tbsp Tropicana Slim Sweetener Stevia (or adjust to taste)
  9. 1 egg
  10. 1 tbsp coconut oil (melted)

  1. In a small bowl, mix almond milk and apple cider vinegar thoroughly. Let it sit for 5 minutes to create a buttermilk substitute.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and Stevia sweetener.
  3. Add the egg, vanilla extract, and melted coconut oil to the almond milk mixture. Stir well.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Don’t overmix.
  5. Heat a non-stick pan over medium heat. Lightly grease with coconut oil.
  6. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute.
  7. Serve warm with fresh berries and a drizzle of Tropicana Slim Arabic Sweets Syrup with Stevia.
